Ingredients - Salad
- 1 head romaine lettuce, washed, cored and chopped
- 1 long cucumber, unpeeled, seeded, and sliced ¼-inch thick
- 1 red bell pepper, large diced
- 1 yellow bell pepper, large diced
- 1 pint cherry or grape tomatoes, halved
- ½ red onion, sliced in half rounds
- ½ cup feta cheese, diced or crumbled
- ½ cup kalamata olives, pitted
Ingredients - Mediterranean Style Dressing (makes approximately 1 cup)
- 1/3 cup balsamic vinegar
- 2 tbsp dried oregano
- 2 cloves of garlic (roughly chopped or smashed)
- 1 tbsp dijon mustard
- ¼ tsp sea salt
- pepper to taste
- 1 cup Three Farmers Camelina Oil (try the Roasted Onion and Basil flavour)
Instructions
Combine vinegar, oregano, garlic, mustard, salt & pepper in either a blender or a bowl. Combine on high speed until blended well. Reduce speed to low and slowly add camelina oil until dressing is completely emulsified. Adjust seasoning and enjoy over your salad ingredients!
TIP: This recipe is also a great marinade for chicken kebobs!
