Creamy Avocado Dressing


  • 2 ripe avocados
  • 1/3 cup Three Farmers Camelina Oil
  • 1/3 cup cider vinegar
  • 3 limes, juiced
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Spoon out the avocado into a blender or food processor. Add vinegar, lime juice, and Dijon. Blend until smooth. While blending, slowly poor in the camelina oil. Slow pouring will ensure a smooth, emulsified, dressing. Season with salt and pepper.

Great for tossed salads, greek salads, taco salads, or simply veggie dip.
