Cauliflower, Apple, and Fennel Soup

Kale Pesto
Ingredients
1?4 cup Camelina oil
1/2 cup fresh lemon juice
2 cloves garlic, minced
1 cup hemp seeds, pine nuts or sunflower seeds
2 tbsp dry basil (or 1?4 cup of fresh)
2 tsp dry oregano (or 2 tbsp fresh)
1 bunch kale
sea salt to taste
In a food processor, mix together Three Farmers Camelina Oil and lemon juice until creamy. Add chopped garlic and hemp seeds/pine nuts/sunflower seeds and mix for 10-15 seconds more. Add herbs and kale and pulse until just combined. Add sea salt to taste.
Creamy Slowcooker Mac N' Cheese
Ingredients 2 cups uncooked pasta 1 cup milk ½ cup sour cream 2 ½ cup shredded cheese (such as cheddar and mozza) ½ cup camelina oil 1 – 10 oz. can cheddar cheese soup ½ tsp salt ½ tsp black pepper ½ tsp dry mustard ¼ tsp cayenne pepper (optional) Only cook the pasta 3/4 of the way; you don't want to cook it completely as it will absorb some of the liquid in the sauce and would become mushy. Wild Mushroom Duxelle

Ingredients 2 cups assorted mushrooms 1 tbsp soft butter 1 tbsp chopped shallots 1 oz. white wine 1 tsp sea salt 1 tsp black pepper 1 tsp thyme fresh 1 tsp fresh oregano 1tsp fresh basil 4 tbsp camelina oil Heat a stock pan to medium heat and add butter. Add shallots and sauté for a few minutes, then add mushrooms.Continue to sauté for a few minutes, add the wine, black pepper, salt and cook until almost dry. Season with salt and pepper and remove from the heat and allow to cool down....
