Three Farmers Mashed Potatoes
Ingredients
3-4lbs of potatoes (peeled and quartered)
4tbsp camelina oil
4tbsp sour cream
1 cup chopped chives
salt and pepper to taste
Bring potatoes to a boil and cook to 'fork tender' - soft. Drain and beat/whip/or mash in camelina oil and sour cream. Stir in chives and season with salt and pepper.
Three Farmers Bread Stuffing
Serves 8 Ingredients 10 cups of cubed foacccia bread 1/4 cup camelina oil (try one of the Three Farmers Roasted Garlic & Chili or Roasted Onion & Basil oils for extra flavour) 1 cup diced onion 1 cup diced celery 1 cup grated carrot 3 cloves minced garlic 3tbsp powdered sage 3tbsp poultry seasoning 3tbsp rosemary 1 cup toasted pine nuts or pumpkin seeds 3 cups chicken stock salt and pepper to taste Saute vegetables and garlic in camelina oil. Tomato Bell Pepper Bisque
Ingredients
2 cups chopped tomatoes
1 cup bell pepper
1?4 cup celery
1?2 small avocado
1?2 tsp sea salt
1?2 tsp dried basil
1?4 cup water
3 tbsp camelina oil
Add all ingredients to a blender and blend until smooth. Serve chilled or warm on the stove top. Serves beautifully with toasted camelina crostins.
Garlic Aioli
Makes 1 cup - maybe you should double the recipe, it is so good. Ingredients 1 clove garlic 2 pinches salt 2 pinches cracked pepper 1-2 egg yolks 1 tablespoon lemon juice 1 tsp dijon mustard 3/4 cup camelina oil Cut the ends off of the garlic, peel it, and either chop it or put it through a garlic press. In a heavy mixing bowl, whisk (you can use an electric whisk) the egg yolks, lemon juice, and garlic mixture together until well combined, about one minute.
